1 Pie Shell Baked
3 Quarts Fresh Strawberries--Washed, Hulled, Halved
1 Cup Sugar
2 T Cornstarch
1 Cup Boiling Water
1 (3 oz) Package Strawberry Flavored Gelatin
In a small pan, mix together sugar and cornstarch; make sure to blend cornstarch in completely or you will have lumps or strings in your filling. Add boiling water and cook over medium heat until mixture thickness. Remove from heat, and add gelatin- stir until smooth. Let mixture cool to room temperature. Working in layers- start layering strawberries then 1/3 of glaze into the pie shell. Make 3 layers, make sure to mound the center of your last layer.
When preparing strawberries hull (cut the green part off) each strawberry then slice one time in half. Place the cut side down and point facing outward when you put your strawberries in the pie shell. This will give your pie a nice deep red color and a professional look.
