Tami's White Chicken Tortilla Soup

My sister gave me this yummy White Chicken Soup recipe years ago. At this point I can't remember if it's even close to the original anymore, but it's REALLY good! And for those busy day's, just grab a rotisserie chicken and this comes together in no time. OH, and a one-pot-wonder always makes me happy! 


Tami's White Chicken Tortilla Soup

Ingredients: 

1 tablespoon olive oil
1 clove garlic, minced
1 cup onion, chopped
1 teaspoon lemon pepper
1 teaspoon cumin 
3 cups cooked chicken 
2 1/2 cups chicken stock
8 oz canned chopped green chilies 
1 can corn, drained 
2 cans Great Northern Beans, not drained
1/8 cup green onions, chopped
juice of one fresh lime
1/2 bunch of cilantro, chopped 


tortilla chips
pepper jack cheese, shredded


Directions: 

In a large sauce pan saute onion in olive oil until onion is translucent, about 5 minutes.  Add minced garlic and continue to cook for 2 minutes. Stir in chicken stock, lemon pepper, cumin and cooked chicken and simmer on low for 5-10 minutes. Add drained corn, green chilies, and not drained Great Northern Beans, and green onions to the chicken and continue to simmer for an additional 5-10 minutes or as long as 45 minutes. Before serving stir in lime juice, and chopped cilantro, cook for a  final 2 minutes. Serve warm soup over tortilla chips, and top with pepper jack cheese.
