Pesto Pea Salad

Out first encounter with this delicious salad was when someone brought dinner to our house years ago. I begged for the recipe, and have been abusing it ever since! I love how quick this Pesto Pas Salad comes together, the bright pesto and the pine nuts are an incredible pair. This Pesto Pea Salad recipe comes from Ina Garten. The pesto is listed on the original recipe but we've found some from a local market that tastes better, and a lot easier then making it yourself. 






Pesto Pea Salad


Ingredients: 


2 cups frozen peas, cooked either in the microwave, or by boiling in water for 1 minute. 
2 tablespoons pine nuts, toasted 
2 1/2 cups baby spinach leaves
4 tablespoons pesto
shaved fresh parmesan cheese


Directions:


Place spinach leaves in salad bowl. Sprinkle with peas and pine nuts over the spinach. Add the pesto and toss. 
Note: to toast pine nuts, place them in a dry saute pan and cook over medium heat for about 4 minutes, until evenly browned, tossing frequently.
