Caramelized Onions & Creamy Chicken Rigatoni

This version of Caramelized Onions & Creamy Chicken Rigatoni came together in my kitchen a couple weeks ago. I love when dinner comes together and there are lots of yums going around the table. Best of all all my kids cleaned their plates, literally my 3 year old licked his plate clean!

  Caramelized Onions & Creamy Chicken Rigatoni

Ingredients: 

2 tablespoons olive oil
2 large yellow onions, peeled, halved and thinly sliced
3 gloves garlic, minced
4 boneless chicken breast, cut into 1/2 inch pieces
1/2 cup butter
1 1/2 cups heavy cream
chopped fresh parsley, for garnish
sea salt, to taste
freshly ground pepper, to taste
1 pound rigatoni pasta
fresh parmesan cheese 


Directions: 

In a large skillet, heat olive oil over medium low heat. Add onions and season with salt. Cook onions, covered, for about 15-20 minutes, stirring occasionally or until the onions start to caramelize. Meanwhile, in a large pot of salted, boiling water cook pasta until al dente. Drain and set aside. Season cubed chicken with salt and freshly ground pepper to liking. Once the onions are browned and limp, turn heat up to high and add chicken and cook, stirring until cooked through and juices run clear. Lower heat to medium and add the butter and garlic. Stir until butter is completely melted. Add heavy cream and simmer for 3-5 minutes, until thickened. Add rigatoni to sauce and stir to combine. Serve pasta topped with fresh parsley, and parmesan cheese.
