Cinnamon Cake

One of my favorite cakes to take someone! It has great flavor, and couldn't be easier. The cinnamon, sugar and pecan mixture you top it with makes this cake phenomenal!

Ingredients:

1 (18 oz) Package Spice Cake Mix
1 Small Package Instant Vanilla Pudding Mix
1 Cup Sour Cream
4 Eggs, Beaten
1/2 Cup Vegetable Oil
5 T Sugar
2 t Cinnamon
1/4 Cup Chopped Pecans

Directions:

Preheat oven to 350F. Combine cake mix, instant pudding, sour cream, eggs, and oil until well mixed. In a separate bowl combine sugar, cinnamon, and pecans. Pour half of batter into greased bunt pan and sprinkle with half of the sugar mixture. Pour the rest of the batter into pan and sprinkle the rest of sugar mixture on top. Bake 30-45 minutes.  Let cool and remove from pan.

Tips:

I like my cake moist and soft, not crumbly- so I bake mine about 30-40 minutes. If you want more of a coffee cake texture bake your cake longer 45-50 minutes.

I'm not a big nut fan, but the pecans in this cake are GREAT- don't leave them out!
