Candied Fruit

Recipe:
1/4 Cup Water
3/4 Cup Sugar 
Desired fruit to candy, sliced into thin slices-- over all size of fruit
 matters as well, look for small. 

Ex: Lemons, Limes, Oranges, Key limes 

Directions:
Combine water and sugar in a small saucepan while stirring bring mixture to a boil (full boil, not simmer-- temperature is important here). Add thin sliced fruit to boiling mixture, reduce heat and simmer for 2 minutes. Remove from sugar mixture and allow to cool. I like to dust the candied fruit with a little sugar (adds some sparkle). 

Decorating Tips:
Allow slices to completely dry and they will become hard, great to stand up on top of a coconut-lime cupcake, surrounded with coconut flakes. 

Sanding sugar is best to add the sparkle at the end, but any kind of white sugar will work.
