What's Cooking? Southwest Chicken

A couple of good friends have said I should post some of the recipes I use for dinners. I usually say were I found my recipe and go into a long rant on what I do different, and by the end they all say, "JUST PUT IT ON YOUR BLOG!" So, we'll give it a try

Today at the Peterson's we are eating:

Southwest Chicken
Rice
Fresh Fruit
Sweet Lemon Sour Cream Bread


Southwest Chicken:

Ingredients:

1 tablespoon olive oil
4 skinless, boneless chicken breast halves
1 (10oz) can diced tomatoes with green chile peppers
1 (15oz) can black beans, rinsed and drained
1 (15 oz) can whole kernel corn, drained
1 pinch ground cumin

Directions:

In a large skilled, heat oil over medium high heat. Brown chicken on both sides. Add tomatoes with green chile peppers, beans and corn. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear. Add a dash of cumin and serve over cooked rice or crushed tortilla chips.

  2. I browned the chicken this morning and threw it all into my favorite kitchen appliance, the crock pot. (Saved my family from starvation while I served as RS Pres for 3 years!)
