Sour Cream Lemon Sweet Bread

Yay! I'm home from a great trip to Southern Texas-- hope y'all had a great Valentine's Day! Ate some really great southern food, experienced crawfish for the first time, yummy chocolates and taffy in Galveston, and played on the beach (great trip)! It definitely left me ready for SPRING-- so here is one of my all time favorite "spring" recipes!

1 1/2 Cups Flour
1/2 t Salt
2 t Baking Powder
1 Cup Sour Cream
3 Eggs
1 Cups Sugar
3 t Grated Lemon Zest
1/2 t Vanilla
1/2 Cup Vegetable Oil

Preheat oven to 350F. Stir together flour, baking powder and salt and set aside. In another bowl combine sour cream, sugar, eggs, lemon zest and vanilla. Slowly whisk the dry ingredients into the wet. After the two mixtures are well combine, stir in vegetable oil. Pour batter into a prepared 8 1/2 inch by 4 1/2 inch pan (grease and flour well, this bread likes to stick). Bake for 50 minutes.
